The "La Riviera" farm is located at over 1700m altitude in the Risalda region of Colombia, this one was founded by Julio César Madrid, 3ᵉ generation of coffee growers, La Riviera offers excellent climatic conditions, necessary for growing coffee. The farm aims to be versatile and excel in all areas, from bean selection to respect for fermentation processes. This attention to detail and the quest for new sensations in the cup have given rise to innovative techniques such as Culturing. Culturing is all about rigor and knowledge of the producer's coffee, and this method gives rise to coffees transformed by research. This is a new fermentation technique in the world of specialty coffee, using fruit cultures, aromatic plants and/or micro-organisms.
For the past 3 years, La Riviera has been working on innovative fermentation methods that blend coffee with tropical fruits such as pineapple, mango, banana and coconut... It is from this form of Culturing fermentation that our Niu batch is derived, and it is from this that its intense and unique notes come.
